正宗水煮肉片的做法
食材:
主料:梅花肉300克,大白菜200克
辅料:鸡蛋清1个,食盐1/2茶匙,,花椒粉2茶匙,,生粉2汤匙,蚝油1汤匙,辣椒粉2茶匙,干花椒15克干辣椒15克细香葱2根蒜3瓣郫县豆瓣酱2汤匙,料酒1汤匙,姜1块菜籽油4汤匙,水适量
做法:
1.将梅花肉切片,我一般用的是猪梅花肉比较嫩,里脊肉我感觉煮过后太老

2.放入碗中,放入适量生粉、食盐、鸡蛋清搅拌均匀,腌制10分钟

3.准备适量的辣椒和花椒,我用的贵州大红袍色泽好看味道没这么辣

4.姜和蒜分别切末

5.炒锅下入干花椒和干辣椒小火培香成棕红色后,捞出剁碎备用,不需要太碎

6.大白菜撕成片,洗净沥干水分

7.炒锅放入2汤匙菜籽油加入豆瓣酱、姜末、葱段炒出红油

8.再将鲜汤或者清水、胡椒粉、料酒、蚝油等调料放入,略搅几下,使之调匀

9.水煮开后,先下入大白菜片煮熟

10.煮熟的白菜片捞出铺入器皿中
