牛肉"及一岁以上二岁左右的牛肉叫Beef。 牛仔(Veal) 一般为三个月至一年之间的雄性小牛的肉,由于牛仔发育尚不完 全,部位细节区分不明显,但就全身而言,不同部位的烹调手法也不同。腿 (Leg), 适合烧(Roast), 烤(Baked), 煎(Panfry), 炸(Fry),炒(Sauteed);脊 背两旁(Chop), 烧、烤、扒;背部(Back), 烧、烤;肩部(shoulder), 烧、烤。 焖(Braise)、烩(Stew);胸部(Breast),焖、烩 、煮;后腿(Feet),可制成 牛仔胶冻(Aspic),脑(Brain),煎、炸;肝(Liver)煎、炸、局;腰子(Kidney) 焖、烩 、煎;牛仔胸腺体(Sweetbread),煮熟后煎炸;舌(Tongue)适合焖、 烩,小牛心(Heart),适合焖、烩;骨(Bone)调制汤羹、及汁;腿关节适合烧、 焖、烩。
